To take a break from homework, I baked cookies. Quite possibily the best cookies ever. Certainly the best I've ever made... Which isn't saying much because I've only baked cookies about 3 times in my life. In any event:
FUCKING TASTY PUMPKIN OATMEAL COOKIES ALSO WITH WHITE CHOCOLATE CHIPS
- 2 cups flour
- 1 1/3 cups oatmeal, old-fashioned or the type you can nuke
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup butter or margaine, softened by nuking
- 1 cup packed brown sugar
- 1 cup regular sugar
- 1 cup canned pumpkin mush
- 1 egg
- 1 teaspoon vanilla extract
- a good size dash of ginger, cinnamon, and nutmeg
- a bag of white chocolate chips
Set oven to 350° F and grease up the cookie sheet.
Mix flour, oats, baking soda, and salt together by hand and then set aside. Beat butter and the sugars with your mixer, then added pumpkin and egg and beat until it's fluffy. Dump in the flour mixture and after everything's combined, throw in the chocolate chips. I used about 3/4 of the bag.
Eat some of it because it's so damn good.
Make globs of the rest and bake for about 16 minutes or until they're light brown.
Lick the spoon and the beaters.
I'm pleased! And my cooking skill has increased by 1!
